More infoBorough Cheese Company specialises in spectacular wheels of Comté cheese made in the Doubs and Jura areas of the Franche-Comte region of eastern France. The cheese is matured in the 19th century Fort Saint Antoine owned by Marcel Petite, one of the most respected affineurs of comte in France. Jason, who founded the company, and Dominic who runs the Borough Market stall visit the fort every six weeks to taste and select the finest Comté, as well as a semi-soft, unpasteurised Tome and Morbier. Borough Cheese have also developed a close relationship with L'amuse, affineurs of the finest Gouda being produced across the Netherlands and Tastanis Dairy, producers of traditional Greek Feta in Lesbos.
