High Street Hero - Thea Wunderer

Combining rustic alpine culture with Mediterranean sophistication, the products found at Thea Wunderer’s Borough Market stall provide a snapshot of the cuisine of South Tyrol, an autonomous province of northern Italy. The charcuterie is made by a family that has been in the business for decades - if not longer - using a recipe handed down through generations. The region’s defining foodstuff is speck alto adige PGI. A ham of Protected Geographical Indication, it can only be made in South Tyrol and has a distinctive taste and texture. Other products include coppa, pancetta, lonza, alpine bresaola, mountain salami, smoked sausages and biltong.
