Meet Todd and Maugan Trethowan, the cheese making brothers who began their careers on the family farm near Llandewi Brefi in the Teifi Valley Ceredigion over 25 years ago. They are the master cheesemakers behind the award-winning Pitchfork Cheddar and Gorwydd Caerphilly. Using unpasteurised milk and traditional methods to create their Caerphilly cheese, they experimented with each stage of the process, including allowing the cheese to mature for longer than other Caerphilly cheeses, giving Gorwydd it’s unique flavours and winning awards. Our Pitchfork cheddar gets its name from the way we toss the curd whilst mixing in the sale, using contemporary ‘pitchforks’ which take direct inspiration from old farming tools, upgraded to meet modern hygiene standards.All our cheeses are then stored in special conditions, set to a specific temperature and humidity. Our Gorwydd’s develop their signature earthy rind after 8 weeks, whereas Pitchfork needs to mature with us for up to 12 months before being ready to eat.
