Tom Haward’s forefathers have been harvesting oysters in the shallow creeks leading from the river Blackwater to the west of Mersea Island, Essex, since as far back as the 1700s. For the past 100 years, the Haward family have been nurturing the same stretch of Salcott Creek, where the warm temperatures provide the perfect conditions for oysters to fatten. Tom specialises in cultivating Colchester native and rock oysters.
